Pizza for Dinner

After making the maja blanca, i felt too tired to prepare food for dinner and so I just ordered my favorite Papa murphy's hawaiian pizza topped with real canadian bacon, pineapple and cheese and I ended up eating 4 slices, whew~. What can I do Im a pizza lover even before back in the Philippines, I don't usually go to restaurant, Im always in a pizza place. Now that I am here in the US I have a lot more options. I haven't tried all of them yet but Im working on it...

Maja blanca

Today I was able to make Maja blanca, it is also known as coconut cake or corn bread except it consist of cornstarch, coconut milk, corn kernels, sugar/condensed milk mixed and steamed to a perfect consistency. My mother used to cook Maja blanca for merienda or mid-afternoon snack back at home. This sweet confection is famous among Filipinos especially ZamboangueƱos like me who has heavy dependence on gata (coconut cream/milk). This cuisine was inspired by Spaniards, Food historians claims that 80 percent of Philippines dishes are of Spanish origin. Here's my maja blanca, it may not look so good but wait till you taste it, it is true that looks can be deceiving. Anyway heres the ingredients and instructions:

1 c. of cornstarch
2 c. coconut milk
a pinch of salt
1 435 g. can of cream sweet style corn
1 396 g. can of condensed milk

Disperse the cornstarch in the coconut milk until completely dissolved. Add the coconut milk salt and cream of sweet style corn. Set over medium high heat and cook, stirring, until thick and no longer cloudy. Remove from the heat and add the condensed milk. Return to the stove and cook over low heat, stirring until the milk is fully incorporated into the mixture. Pour into a baking dish and leave to cool for 30 minutes before cutting and serving.

This is the easiest way to make a good dessert. I found this online you might as well give it a try. Its delicious!

California State Fair

We went to the state fair last Tuesday but unfortunately I forgot my cam at home and so I wasnt able to take pictures but nevertheless I had great time, especially when I was able to watch Natasha Bedingfield concert, for those who doesnt know her, heres the trivia: the commercial song for Pantene entitled unwritten is one of her hits. She grew up in the southwest of London. Both of Natasha's parents were born in New Zealand giving Natasha a strong identification with New Zealand. It was a great concert and the crowd was really cool. What I also enjoyed more are the foods. I had mexican, asian, american and some others, good thing that I have a tough gastrointestinal system and was able to manage. hehe...

The theme for this year state fair is Going Hollywood, they have some exhibits where they diplayed some costume and some other things that were used in blockbuster movies like Batman, Indiana Jones and a lot more. Im hoping one of this day I get the chance to visit hollywood, we just have to work first on our schedule. To sum up It was a great experience and my very first. I cant wait for another state fair next year and make sure ill bring my camera.

Top-seeded Ivanovic upset by Coin at US Open

Anna Ivanonic is currently ranked no. 1 in WTA, she's one of those tennis supertars that I truly admire and adore, she's a great tennis player and posess a captivating beauty. But sadly the top-seeded Ivanovic was ousted from the U.S. Open, stunned by 188th-ranked Julie Coin from France 6-3, 4-6, 6-3 in the second round Thursday. I was able to watch her game this morning and like her I was upset too. According to the news never before in the Open era that began in 1968 had the No. 1 woman lost this early in the tournament. Well sometimes even how much we really try harder its just it doesnt work like we want it to be, maybe thats what happen to Ivanovic during the game, I saw her striving to be in the right track but then its not really her day, wew! better luck next time.
