Maja blanca



Today I was able to make Maja blanca, it is also known as coconut cake or corn bread except it consist of cornstarch, coconut milk, corn kernels, sugar/condensed milk mixed and steamed to a perfect consistency. My mother used to cook Maja blanca for merienda or mid-afternoon snack back at home. This sweet confection is famous among Filipinos especially ZamboangueƱos like me who has heavy dependence on gata (coconut cream/milk). This cuisine was inspired by Spaniards, Food historians claims that 80 percent of Philippines dishes are of Spanish origin. Here's my maja blanca, it may not look so good but wait till you taste it, it is true that looks can be deceiving. Anyway heres the ingredients and instructions:


1 c. of cornstarch
2 c. coconut milk
a pinch of salt
1 435 g. can of cream sweet style corn
1 396 g. can of condensed milk

Disperse the cornstarch in the coconut milk until completely dissolved. Add the coconut milk salt and cream of sweet style corn. Set over medium high heat and cook, stirring, until thick and no longer cloudy. Remove from the heat and add the condensed milk. Return to the stove and cook over low heat, stirring until the milk is fully incorporated into the mixture. Pour into a baking dish and leave to cool for 30 minutes before cutting and serving.

This is the easiest way to make a good dessert. I found this online you might as well give it a try. Its delicious!
